Omentum. Not sure in culinary terms. Why salt and soak if the only blood we can’t eat is that which would have been poured on the ground (rare steak ok)? Nice talk. Do you actively add to your podcast channel?

    The practice of salting was added at a later stage because people wanted to avoid all blood. I add recordings when I record new ones.
